THE FRENCH-STYLE MACARON What is a French-style Macaron? It is a stroll through the streets of Paris in summer. It is as delicate as the flutter of wind down the Champs Elysee. To properly indulge in this, the treat among treats, it is essential to know the history around it. The French-style Macaron was created and made famous by the brilliant pastry chefs at Laduree in Paris. The history of the macaron is just as rich and illustrious as the colorful little sandwich. In 1862 just as construction of the infamous and awe-inspiring Garnier Opera was beginning, Louis Ernest Laduree opened his patisserie and café nearby on Rue Royale, creating one of the first “salon de the” (or tea salons). The area transformed into one of the most elegant parts of Paris with nothing but the best of food, clothing, and art creating the pulse for the City of Lights. Over 100 years later, no visit to Paris is complete without tea and macarons at the legendary Laduree. They sell over 3,000 macarons per day! With the first bite- a crunch as you taste the light meringue. This gives way to a cookie-like chewiness that melds into a mouth-watering buttercream. Part meringue, part cookie, sealed with creamy buttercream makes for a complete piece of heaven. It has always been my dream to bring a bit of Paris to Texas.
